I’m so excited for this cheesecake bar recipe. If you go to my recipes tab and click on the pineapple cheesecake bars, you’ll see my recipe for these beautiful creations. You’ll also see the two recipes that I combined and converted to low carb ingredients. The decision to try to make this recipe low carb was a spur of the moment decision, and I definitely did not expect it to work out. The recipe for the filling is called “130 Calorie Greek Yogurt Pineapple Bars”. However, after tasting what I made, they definitely scream cheesecake.
I plan on further working with this new recipe and continuing to edit it. For one, I didn’t feel like the pineapple flavor was enough to justify having it in the recipe. The pineapple juice definitely adds unnecessary carbs to the dessert. I could swap it out with lemon juice. That will also add in carbs, but I feel that the taste will be more prominent. Overall, these turned out deliciously.
For the crust, you toast the almond flour on the stove for a few minutes. This helped crisp up the almond flour itself and made it very aromatic. Next you mix in the erythritol, cinnamon, salt, and butter. I’m thinking for another flavor, I could mix chai spices into the crust mixture for a chai cheesecake flavor (minus any juices in the filling itself). I’m thinking with a vanilla flavored filling, a chai crust would be delicious.
For an actual cheesecake, made in a spring-form pan, I was thinking about not quite doubling the recipe. For these bars, the height of the crust and the filling were about equal. For a cheesecake, there should be more filling than crust. However, this recipe serves 12 . A typical cheesecake more than likely would serve 8, or at most 10. This would increase the amount of carbs per serving.
Just for giggles, I googled how many carbs are typically in a piece of plain vanilla cheesecake from the Cheesecake Factory. Are you ready for this? It has 62 g! These cheesecake bars have 9.3 g of carbs. So I guess we’re off to a good start at least. In my google search, I also found another low carb cheesecake recipe from Wholesome Yum. What haven’t they thought of? 😂 It actually looks pretty consistent with what I did with these two recipes, but an obvious difference is not using any juice for flavoring, and they didn’t use any Greek yogurt, but all cream cheese. This would definitely lower the carb count in the cheesecake.
